Gefilte Fish translates to "stuffed fish". It first appeared among Jewish people living inland, so it was made from fish only available to them. The fish mixture would be "stuffed" back into the skin and then poached. Modern day gefilte fish consists of several varities of fish chopped and formed into patties or balls.
